Weber Q-Breakfast tartlets

Weber Q – Breakfast Tartlets Recipe

Preparation Time: 15-20 minutes
Cooking time: Pastry setting, 22-33 minutes
You’ll need: breakfast plate, trivet and foil

 

1 small onion, finely chopped
200g small white mushrooms, sliced
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped
4 sheets filo pastry
60g butter, melted
Olive oil
150g sour cream
6 eggs
3 cherry tomatoes, halved
½ cup cheese, grated
Chives chopped

 

Cook the onion and mushrooms on the breakfast plate for 2-3 minutes, stirring occasionally.

Remove them from the barbecue, and season with salt and pepper.

Add the chopped parsley and allow to cool.

Brush one side of the pastry sheet with the butter, place another sheet on top and repeat this process until a stack of 4 buttered sheets as been formed.

Lightly oil 6 muffin pans.

Cut through the stack of pastry sheets to make squares big enough to overlap each pan, the line the pans with the pastry sheets.

Combine the mushroom mixture with the sour cream and spoon into each pastry lined pan.

Crack an egg onto this mixture and top it with the tomato and grated cheese.

Carefully remove the breakfast plate using heat proof mittens.

Using the roasting trivet, bake the tartlets over foil for 20-30 minutes, or until the egg is set and the pastry is golden and crisp.

Sprinkle with chopped chives.

Chicken sausage roll

Chicken Sausage Roll Recipe

Preparation time: 10 minutes
Cooking time: pastry setting, 25-30 minutes
You will need: trivet & foil

 

Ingredients:
500g lean chicken mince
½ cup stuffing mix
½ cup tasty cheese, shredded
¼ cup cold water
1 tablespoon lemon pepper
1 tablespoon chopped parsley
2 sheets frozen puff pastry, thawed
Egg wash for glazing
Sesame seeds

 

  • Combine mince, stuffing mix, cheese, water, lemon pepper and parsley.
  • Cut the pastry sheets in half.
  • Place a line of mince in a sausage shape along one edge of the pastry strip.
  • Brush the other edge of the pastry with the egg wash.
  • Roll up with the seam underneath.
  • Cut each log into 6 mini rolls, about 4-5cm long, without cutting all the way through.
  • Brush with egg wash and sprinkle with sesame seeds.
  • Cook for 25-30 minutes, until golden brown.
  • Cut each of the logs all the way through into separate portions and serve.

PLUM AND MACADAMIA NUT MUFFINS

Plum and Macadamia Muffin Recipe

Preparation time: 20 minutes
Cooking times: roast setting, 20-30 minutes
You will need: trivet & foil

 

Ingredients:
½ cup natural yoghurt
125g butter
1 cup demerara or caster sugar
2 eggs
2 cups self raising flour
1/3 cup macadamia nuts, chopped
6 plums, roughly chopped, stones removed
2 extra plums sliced

 

  • Beat the yoghurt, butter and sugar together until pale and creamy.
  • Add the eggs, one at a time, beating well after the addition of each egg.
  • Stir in the flour, nuts and chopped plums. Do not over mix.
  • Spoon mixture into buttered muffin pans, placing the extra slices of plums on top.
  • Cook on the roasting trivet for 20-30 minutes.

ROAST PORK LOIN WITH BRANDIED FRUITS

Roast Pork Loin with Fruits Recipe

Preparation time: 15 minutes
Cooking time:
roast setting, 45-60mm thick 45 mins – 1 hour
                    90-105mm thick 1½ - 1¾ hours

You will need: trivet

Ingredients:
1-2 kg boned loin of pork, fat and rind removed
250g jar brandied fruit e.g. Apricots, prunes, cumquats
1½ tablespoons toasted, slivered almonds
2 tablespoons oil
Sea salt

Sauce:
¼ cup port
¼ cup water
½ teaspoon grated orange rind
1 teaspoon corn flour
Juice of ½ orange
Reserved fruit and syrup from brandied fruit

 

  • Lie the pork flesh side up on a board. Butterfly the thick part of the mean, fold out flat so the meat is an even   thickness.
  • Drain the brandied fruit and reserve the syrup.
  • Combine 2/3 of the fruit and almonds together in a bowl.
  • Place fruit along the middle of the roast, fold over and secure well with skewers or string.
  • Rub the meat surface with oil and salt.
  • Cook the meat on the trivet. For about 45 minutes to 1 hour.
  • Make the sauce by combining all sauce ingredients in a small saucepan, and bring to the boil, stirring all the time.
  • Serve the roast sliced accompanied by the sauce and vegetables or salad in season.

ROAST VEGETABLES

Roast Vegetables Recipes

Preparation time: 15 minutes
Cooking time: roast setting, 30-40 minutes
You will need: vegetable basket

Ingredients:
A mixture of root vegetables
3 cloves of garlic, pressed
2 tablespoons olive oil
Salt & pepper to taste

  • Combine all the ingredients in a vegetable basket and cook for 30-40 minutes
  • Stir once during the cooking
  • Begin cooking vegetables before any meat goes on the barbeque, in order to have meat and vegetables finished at the same time
